As ingredient diversity continues to increase, successful commercialization of alternative protein products depends on a deeper understanding of material behavior and process–structure–product relationships. This joint presentation by KIT and Thermo Fisher Scientific combines scientific insights with practical development approaches to show how understanding material behavior can accelerate product development and scale-up.
